In my house baking Banana Bread was born out of necessity. Like most people, my family buys bananas every week. Probably like most people, my family ends of throwing some of those bananas away. For me buying bananas is a magical experience. You go to the supermarket and there you find piles of delicious bananas.

2 cups unbleached all purpose flour
1 tsp baking soda
1/4 tsp sea salt
1 tsp cinnamon
2-3 bananas over ripened
1/2 cup of unsalted butter
1 cup sugar
1 tsp vanilla extract
1/2 cup Chopped Macadamia nuts (optional)
1Preheat oven to 350 degrees.
2Grease a 9x5 loaf pan.
3In a medium bowl combine flour, baking soda, salt, cinnamon.
4Mash the bananas in a small bowl and set aside.
5Using an electric mixer cream together the butter and sugar.
6Add the banana, eggs, and vanilla. Mix on medium until well blended.
7Add flour mixture a little at a time mix until well blended.
8Stir in Macadamia nuts. (optional)
9Pour batter into prepared loaf pan.
10Bake in preheated oven for 1 hour or until a toothpick inserted in the center of the loaf comes out clean.
11Let bread cool in the pan for 10 minutes and then transfer to a cooling rack.
